As excellent as are the hundreds of cheeses that originate from all corners of the globe, France is always the first country that comes to mind when discussing cheese making. Our French Cheese Assortment captures a good bit of French cheese culture with the four cheeses listed below. Herve Mons 1924: A bold and creamy blue cheese from one of France’s most renowned affineurs, Hervé Mons. This cheese delivers an intense, tangy flavor with earthy undertones and a crumbly yet smooth texture, making it a standout for blue cheese lovers. (1/2 lb )Camembert: This famous soft-ripened cheese from Normandie has a creamy interior beneath a fluffy (and edible) white rind. Similar to Brie, but with a slightly fuller flavor. French Camembert Cheese Made from pasteurized cow's milk Born centuries ago in Normandy, one of France's most fertile regions, authentic Camembert is still exclusively produced there. The Norman dairy farms, covered with delicious grass for cows to graze upon, are peppered with apple trees that protect the rich soil. In fact, some people claim to be able to taste a hint of apple beneath the creamy suppleness of fresh Camembert. A similar cheese to brie, Camembert is formed into smaller wheels and may have a slightly more robust flavor than its larger cousin. Firm when chilled or runny at room temperature, there are many ways to enjoy this wonderful cheese-- with bread, fruit, or nuts. Best when eaten at room temperature. French Comte Cheese Made from unpasteurized cow's milk; aged for a minimum of 10 months Comte is an Alpine cheese similar to Swiss Gruyère but made across the border in the French Jura region. Flavors vary in intensity based on the season, production techniques and, most importantly, age. A wonderfully versatile cheese, Comte Reserve is great for snacking as well as for cooking. It also pairs well with almost any wine, especially whites and light-bodied reds. Comté is made in a unique manner. Its milk is delivered from the farm to fruitières daily, where cheese is made. It is then passed on to affineurs who age the cheese in optimal conditions. The maître affineur (cave master) supervises each and every wheel with constant care. Salting, rubbing, flipping, and monitoring are all key components of the aging process for this spectacular French cheese.
